Like most people with a sweet tooth, I pride myself on my knowledge of a wide variety of desserts.
I’ve sampled everything from chocolate-covered strawberries, to homemade gelato, to this unbelievable candy bar pie. But in all of my dessert explorations, I have never come across a clafoutis — until now.
A clafoutis is a delicious dessert that features fresh berries, a flan-like batter, and powdered sugar on top. And after one bite, I can say that this might just be my new favorite sweet treat to cap off any meal.
In this exclusive video, you’ll see how to make your very own berry clafoutis. And while the video uses blackberries and blueberries, you can bake one using any type of berry you like, making it the perfect dessert for spring!

1 cup powdered sugar
1/3 cup flour
1/2 tsp. baking powder
1 cup half-and-half
1 1/2 tsps. vanilla
6 oz. blackberries
6 oz. blueberries
Preheat oven to 375 °F.
Coat a 9-inch pan with butter and sugar.
In large mixing bowl, combine sugar, flour, baking powder, and a pinch of salt.
In separate bowl, beat eggs, half-and-half, and vanilla.
Add in sugar mixture and zest of lemon, and beat thoroughly.
Place blackberries and blueberries in 9-inch pan.
Pour in batter.
Bake for 30 to 35 minutes at 375 °F.
Top with powdered sugar, serve, and enjoy!
