Spice Up Your Mornings With These Yummy ‘Eggs In Purgatory’

Iknow I can’t be alone in my love of all things breakfast. After all, who wouldn’t want to start each day off with a tasty, homemade meal?
And luckily for me, there are more than a few options for delicious, easy-to-make breakfast recipes, like this healthy stuffed French toast.
But the next time I’m in the mood for eggs, I’m going to be trying out something entirely new with this incredible twist on a traditional breakfast food.
Bringing together regular fried eggs with tomatoes, onions, peppers, herbs, and spices, these “Eggs in Purgatory” are a great way to add some kick to my breakfast.
And unlike many other breakfast recipes, this one takes no time at all, and the results are absolutely delicious.

  • 3 Tbsps. olive oil
  • 1/2 large onion, diced
  • 1/2 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 Tbsp. oregano
  • 1/4 tsp. turmeric
  • 1/4 tsp. cumin
  • 1/4 tsp. paprika
  • Salt
  • Pepper
  • Red pepper flakes
  • 15 oz. canned tomatoes
  • 4 eggs
  • Instructions
    • Drizzle olive oil in saucepan over medium heat.
    • In saucepan, add onion, pepper, garlic, oregano, turmeric, cumin, paprika, salt, pepper, red pepper flakes, and tomatoes.
    • Crack eggs into saucepan.
    • Cover with saucepan lid, and cook until whites are set, while yolks are still runny.
    • Serve with bread, and enjoy!
