Ingredients
  • 1 package corn muffin mix
  • 1 1/4 cups milk
  • 2 eggs
  • 2 Tbsps. butter, melted and cooled
  • 3/4 cup cheddar cheese, shredded
  • 1 ear roasted corn
  • 1/4 cup scallions, diced
  • Pre-prepared pulled pork
  • Barbecue sauce, to taste
  • Instructions
    • Combine muffin mix, milk, eggs, and butter. Mix thoroughly into a batter.
    • Add cheddar, corn, and scallions to the batter. Mix once more.
    • Pour batter into heated, greased waffle iron. Seal and cook until golden brown.
    • Repeat until there's no batter left.
    • Top with pulled pork and barbecue sauce.
    • Serve hot and enjoy!
