And lucky for me, there are quite a few recipes out there that put an even tastier twist on the traditional version, like cheesy baked potato soup or even easy-to-make loaded Hasselback potatoes.
But none can compare to this latest recipe for volcano potatoes.

Serves 2
Ingredients
  • 2 potatoes
  • 1 cup broccoli, steamed
  • 1 cup cheddar cheese, shredded
  • Bacon
  • 1/2 cup sour cream
  • 1 Tbsp. hot sauce
  • Chives, chopped
Instructions
  • Preheat oven to 425 °F.
  • Bake 2 potatoes in aluminum foil for 20 minutes at 425 °F.
  • Slice off one end of each potato.
  • Remove other end using a jagged, diagonal-cut pattern.
  • From the jagged end, scoop out inside of potato.
  • Scoop cheddar cheese and broccoli into hollowed-out potato.
  • Wrap potato in raw bacon, holding in place with toothpicks.
  • Top off with more cheese.
  • Bake for 60 to 70 minutes at 325 °F.
  • In small mixing bowl, combine sour cream and hot sauce.
  • Top each potato with sour cream mixture and chives, as desired.
  • Serve and enjoy!
