This recipe takes inspiration from classic spinach artichoke dip, but instead of being paired with crunchy chips, the cheesy dip doubles as a spread, and is smeared on chewy bagels.

Ingredients
- 3/8 cup mayonnaise
- 2 oz. cream cheese
- 3/8 cup sour cream
- 1/2 clove garlic, minced
- Scallions, finely chopped
- 12 Tbsps. Dijon mustard
- 1/2 can artichoke hearts
- 4 oz. fresh spinach, chopped
- 3 oz. freshly grated Parmesan
- 7 oz. freshly grated mozzarella
- 9 bagel halves
- Instructions
- In a bowl, combine mayonnaise, cream cheese, and sour cream. Beat with electric mixer until smooth.
- Add in garlic, scallions, and mustard. Stir until mixed.
- Add in artichoke hearts, spinach, Parmesan, and mozzarella. Stir well until mixed.
- Lay bagels onto baking sheet. Spread about 4 Tbsps. of spinach and artichoke dip on each bagel.
- Bake in oven at 375 °F for about 7 to 8 minutes, or until melted and bubbly.
- Serve hot, and enjoy!
