How To Make Delicious Four-Berry Blintzes Like A Professional Chef

There is nothing quite like kicking off the day with a delicious home-cooked meal.
And with so many yummy breakfast recipes out there like this egg-in-a-hole grilled cheese breakfast sandwich there is never an excuse to start the day hungry.
But now that I’ve found this tasty four-berry blintz recipe, I am so excited to whip up a meal that includes two of my favorite ingredients: fresh fruit and flavor-filled cheese.
This exclusive video shows how easily you can transform into a professional chef, with results that will look and taste just like they came from the kitchen of the fanciest breakfast joint in town.
And while I’m not normally the world’s greatest cook, these recipe steps are so simple to follow that even someone like me can have blintzes for breakfast.

Ingredients
  • 2 eggs
  • 2 Tbsps. butter, melted and cooled
  • 2 cups milk
  • 2 tsps. vanilla
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 1/2 cups flour
  • 8 oz. cream cheese
  • 1 cup ricotta cheese
  • 3/4 cup additional sugar
  • 1 Tbsp. lemon zest
  • 1/2 cup blackberries
  • 1/2 cup strawberries
  • 1/2 cup blueberries
  • 1 tsp. additional lemon zest
  • 1/2 cup raspberries
  • Powdered sugar
  • Instructions
    • Blend eggs, butter, milk, 1 tsp. vanilla, 1 Tbsp. sugar, 1/2 tsp. salt, and flour in blender until smooth.
    • Strain and set batter aside.
    • In mixing bowl, mix cream cheese, ricotta cheese, 1/4 cup sugar, 1/2 tsp. salt, lemon zest, and 1 tsp. vanilla.
    • In saucepan, combine blackberries, strawberries, blueberries, 1/2 cup sugar, and 1 tsp. lemon zest.
    • Cook until soft. Cool, puree in a blender, and strain.
    • Add 1/2 cup raspberries to puree and muddle.
    • Pour 1/4 cup batter into saucepan.
    • Cook one side until golden but pliable, and repeat with remainder of batter.
    • Top cooked side of each blintz with 3 Tbsps. of cheese mixture.
    • Fold each blintz and cook in saucepan until both sides are golden brown.
    • Serve with additional berries and powdered sugar, as desired.
