I’m the proud owner of a notorious sweet tooth, so I don’t like to play favorites when it comes to desserts.
That said, if I absolutely have to pick, I have a few ideas for my shortlist. For example, I love absolutely anything that combines caramel and chocolate, like these salty caramel brownies!
Fortunately for me, there’s no rule that says you can only have one favorite dessert because, love for caramel aside, I would never be able to sacrifice my other favorite sweet treat: cheesecake.
Best of all? I just discovered an amazing recipe that will ensure that I never have to pick between the two ever again.
It’s a decadent and scrumptious cheesecake, topped with oodles of chocolate and piled high with Rolos, the classic cone-shaped candy liberally stuffed with chewy caramel.

- Ingredients
- 3 cups graham cracker crumbs
- 2 cups sugar
- 2 sticks butter, melted
- 1 stick butter, room temperature
- 16 oz. cream cheese
- 2 eggs
- 1/4 cup flour
- 1 bag mini Rolos
- 6 oz. chocolate chips
- 1/4 cup light corn syrup
- 1/2 cup chocolate candy melts
Instructions
- Combine graham cracker crumbs, 1 cup sugar, and melted butter. Mix well until smooth.
- Pat crumb mixture into foil-lined 9x13 pan. Press firmly into place, smoothing as you go.
- Bake for 10 minutes at 350 °F.
- Meanwhile, combine cream cheese and eggs. Mix thoroughly with electric mixer.
- Add remaining sugar, mix again, then follow with flour. Mix one more time with electric mixer.
- Add in most of the Rolos, reserving 16 for later. Mix by hand until distributed evenly in the cream cheese mixture.
- Spread cream cheese mixture across the top of the graham cracker crust, smoothing evenly.
- Bake an additional 30 to 35 minutes at 350 °F.
- Melt chocolate chips and remaining butter. Mix together until smooth.
- Add corn syrup, and continue mixing until fully blended. Pour chocolate mixture over the top of the cheesecake.
- Chill for 4 hours or overnight.
- When cool, melt chocolate candy melts, and drizzle about 3/4 over the top of the dessert.
- Slice into sixteenths, using remaining chocolate to "glue" additional Rolos into the center of each square.
- Serve chilled and enjoy!
