There is a reason that many French recipes are considered wonderful kitchen classics all over the world.
Some of these dishes make use of the simplest, most accessible of ingredients, and yet, when finished, look stunning — and taste even more sensational.
In an exclusive video below, we share a recipe for one of the most well-known sandwiches in both the French and English-speaking worlds: a croque madame.
You can think of it as sort of an inside-out egg-in-a-hole grilled cheese sandwich, but with more spices, interesting steps, and a very special, famous “white sauce.”
You can absolutely substitute any of the ingredients listed below for your favorites, and, if you fancy a sandwich without an egg, simply leave it out, to make the equally famous “croque monsieur” sandwich.

- Ingredients
- 4 Tbsps. butter
- 1/6 cup flour
- 1 cup milk
- 1/8 tsp. dry mustard
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1/8 tsp. hot sauce
- 1/8 tsp. garlic powder
- Pinch of dry nutmeg
- 4 slices white bread
- Dijon mustard
- 8 to 10 slices ham
- 1 Tbsp. olive oil
- 4 oz. shredded Gruyère cheese
- Freshly grated Parmesan
- 2 eggs
Instructions
- To make béchamel sauce, melt 2 Tbsps. butter in a saucepan over medium heat.
- Add in flour, then whisk until smooth. Cook for another 2 minutes to cook out the raw flavor.
- Gradually add in milk, and smooth out any lumps in flour. Slowly bring to a boil, then continue whisking.
- Once at a boil, add in dry mustard, salt, pepper, hot sauce, garlic powder, and nutmeg. Reduce heat, and continue stirring until thickened.
- To assemble each sandwich, spread béchamel sauce on 1 slice of bread. Spread Dijon mustard on the other slice.
- Top with 4 to 5 slices ham.
- In saucepan, melt remaining butter with olive oil. Toast each sandwich on both sides, until golden brown.
- Remove from heat and spread more béchamel sauce over top of sandwich.
- Sprinkle top with both cheeses.
- Place sandwiches on foil-lined baking sheet, and broil in oven until cheese is bubbly and golden brown.
- In the meantime, cook eggs sunny-side up.
- Top sandwiches with eggs to finish. Serve hot and enjoy!
