Jalapeño Corn Fritters Deliver Delicious Southwestern Spice

henever I’m in the mood for a delicious dish that has a little spice to it, I look no further than the Southwest.
There are so many recipes for southwestern meals that have a little kick to them, like this Crock-Pot southwestern quinoa chili. And this new recipe for jalapeño corn fritters is about to be added to my list of spicy favorites.
These corn fritters have just the right amount of bite to them, and include several of my favorite ingredients: corn, cheese, bacon, and (of course) jalapeño.
In this exclusive video, you see how simple these southwestern corn fritters are to make right in your very own kitchen. They are super tasty, and they go perfectly with a little bit of Sriracha and a squeeze of fresh lime.

Ingredients
  • 2 jalapeños, diced
  • 2 green onions, sliced
  • 1 handful cilantro, chopped
  • 2 cups corn
  • Bacon, cooked and crumbled
  • 1 lime, juiced
  • 1 tsp. paprika
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup cream cheese
  • 1/2 cup flour
  • 1 egg
  • Instructions
    • In large mixing bowl, combine jalapeños, green onions, cilantro, corn, bacon, lime juice, paprika, cheddar cheese, cream cheese, flour, and egg.
    • Form mixture into small fritters.
    • Cook fritters with oil in frying pan until golden brown on each side.
    • Serve and enjoy!
