This Meatball Grilled Cheese Sandwich Brings Lunch To The Next Level


With so many breakfast lovers out there, and so many recipes for great dinner dishes, it seems that lunch is the oft-forgotten meal of the day.
With a busy schedule or an on-the-go lifestyle, we may be resigned to eating whatever lackluster lunch options are quick and convenient — but this doesn’t have to be the case.
There are actually quite a few ways to make simple sandwiches that still pack a delicious punch — such as this blueberry balsamic grilled cheese sandwich.
And now, I am actually finding myself excited for lunch, because I found this recipe that combines two of my favorite comfort foods: a grilled cheese sandwich and meatballs.
In this exclusive video, we’ll show just how simple this lunch recipe can be. With a few simple steps, I can up my grilled cheese game and enjoy my lunch like never before.
And for those like me who don’t always have time to cook up meatballs at lunchtime, we can whip up some meatballs the night before, and throw them on our sandwiches when the time comes — it’s so easy!

Ingredients
  • 1 lb. lean ground beef
  • Salt and pepper, to taste
  • 1/3 cup Romano cheese
  • 2 cloves garlic, minced
  • 2 tsps. Italian seasoning
  • 1/2 tsp. red pepper flakes
  • 1/4 cup bread crumbs
  • Olive oil
  • 14 oz. tomatoes, diced
  • 8 slices bread
  • Butter
  • 4 slices fontina
  • 8 slices provolone cheese
  • Instructions
    • In a large mixing bowl, combine ground beef, salt and pepper, Romano cheese, garlic, Italian seasoning, red pepper flakes, and bread crumbs.
    • Form into meatballs.
    • Pour olive oil in frying pan, adding meatballs and cooking thoroughly.
    • Stir in tomatoes.
    • Butter outsides of 2 slices of bread.
    • On inside of bread, layer 1 slice fontina cheese, 5 meatballs, 3 Tbsps. tomatoes, and 2 slices of provolone cheese.
    • Cook in frying pan until cheese is completely melted.
    • Serve and enjoy!
